I'm going to take all elimination diet posts onto a filter so the rest of you don't get spammed by them.  If you want to be on the filter, let me know.

First question -- what is a good non-dairy, non-soy substitute for yogurt?  I need something that I can use as a creamy-ish base for (non-wheat) cereals and pasta sauce.  All the rice/nut milks are too thin.

You can find a coconut yogurt at some grocery stores. Not all. Wholefoods would be a good bet. I was stunned to find it once at the Safeway on Shoreline. I haven't actually tried it, since I don't much like yogurt to begin with. But I have been very fond of the coconut milk ice cream from the same company (Pure Decadence).

My advice is that rather than try to find substitutes you take this opportunity to change your diet in a more meaningful way and get rid of the cereals and pastas entirely ;-)

But otherwise:
Yeah, coconut is good. Also, it's easy to make your own nut milks and a lot healthier (and cheaper) than what you buy at the store. And you can adjust the thickness to what you want when you make it yourself.

Remember that neither of those options has the calcium though, and you will need to give some thought to how you are getting calcium in your diet.

Regarding nut milks, define "easy". I'm lazy when it comes to food prep. :-)

Also, what alternative sources of calcium do you recommend?

A few minutes with a blender, a strainer and some cheesecloth. Put a cup of raw almonds (or whatever nut - sunflower seeds work well too) and a cup of water in the blender with whatever flavorings you want (I like a tsp. honey and 3/4 in. vanilla bean for drinking, plain for cooking with). Blend well. Add 4 cups water (for normal drinking consistency - adjust for whatever you want) and mix. Pour into cheesecloth sitting in a strainer over a bowl or something. Ignore it while you go shower or something. Come back, squeeze the cheesecloth to get all the liquid out and throw out the solids.

Fish that you eat with bones like sardines and anchovies are really good sources of calcium. Also, dark green vegetables like spinach and collard greens are very good. Vegetable calcium is not absorbed as easily as the calcium in milk typically, so you need more of it.

Or, I suppose arrowroot, since you're likely trying to cut out corn too.

Yup, no corn. Never heard of arrowroot -- just looked it up. I like that it's also called "Obedience plant".
