My advice is that rather than try to find substitutes you take this opportunity to change your diet in a more meaningful way and get rid of the cereals and pastas entirely ;-)

But otherwise:
Yeah, coconut is good. Also, it's easy to make your own nut milks and a lot healthier (and cheaper) than what you buy at the store. And you can adjust the thickness to what you want when you make it yourself.

Remember that neither of those options has the calcium though, and you will need to give some thought to how you are getting calcium in your diet.
